Blueberry Batter Cake

Ingredients:
2 cup blueberries
3 Tbsp. shortening
3/4 cup sugar
1/2 cup milk
1 cup flour
1 tsp. baking powder
Pinch salt
1 cup sugar
1 Tbsp. cornstarch
1 cup boiling water
Juice of 1/2 lemon

Directions
Grease an 8 x 8 pan. Put in blueberries (fresh or frozen), sprinkle with lemon juice. Mix 3/4 c. sugar, milk, flour, shortening, and baking powder. Pour this batter over the blueberries and spread evenly. Combine 1 c. sugar and cornstarch. Sprinkle this over the batter. Pour 1 c. boiling water over all. Bake at 350 for 50-60 minutes. The top will be golden brown and blueberries will be bubbling. Serve with whipped cream or ice cream.
Recipe note: Other fruit may be substituted for the blueberries. A combination of raspberries and blueberries or peaches and blueberries is delicious.
